This tart is great to serve as an appetizer because it tastes just as good hot from the oven as it does at room temperature. I also like how you can prepare all of the ingredients the day before hand and only have the assembly left before a party.
The original recipe called for leeks and red and green onions. I decided to modified it and just use leeks and sweet yellow onions. The base of this tart is puff pastry. I have never actually made my own. If you live in Calgary I would recommend that you get your puff pastry from the Brulee Patisserie. They make it fresh in the shop and I have always had great results with it. I also love having a reason to go there so that I can get one of their Molasses Spice Bars. It is so delicious – filled with raisins, apricots, and blackstrap molasses.
