Chocolate Almond Meringue Cookies

I have always wanted to try out a meringue cookie recipe but thought that they would be tricky. I was totally wrong about them! Not only were they simple to make but they were delicious with an intense chocolate flavour. Meringue is low in calories so you don’t have to feel guilty if you decide to have more than one. Serve them with the Dark Chocolate Sorbet and you will have a great dessert to entertain with. (more…)

Triple Chocolate Biscotti

I love to have chocolate biscotti with my morning coffee, sneaky way to have chocolate for breakfast. These biscotti turned out perfect with just the right balance of creamy chocolate and crunch from the walnuts. Biscotti are a great area to experiment with flavour combinations. You can add your favorite kind of nuts and instead of chocolate chips dried fruit can be substituted. Biscotti are also a light cookie with only 2 tbsp of butter for the entire recipe so they would be good to make if you are still on your post Christmas diet. (more…)

$50,000 Treats

Every year around Valentine’s Day I like to make these cookies. My Mom originally got the recipe off of the Oprah Show over 10 years ago when a lady entered a contest on the show and won $50, 000 for this recipe, hence the name. These cookies are moist and the Hersey’s kiss or hug in the center is soft and chewy. If you are having trouble thinking of a gift for your Valentine this year make them a big batch of these cookies and you are sure to win lots of brownie points. (more…)

This is my favorite holiday cookie. I love the spicy smell that they put throughout the house when you bake them. My mom started making these cookies when she was a little girl and not a year goes by that we don’t make a big batch of them together for Christmas. Shortbread Sandwich Cookies

This is my mom’s traditional shortbread recipe but this year I decided to jazz it up and make it into sandwich cookies. The black cherry jam goes really well with these cookies and the red colour makes them look very festive. They would be great to use for a cookie exchange and are great with a cup of afternoon tea.
