Put roast turkey to good use after it is enjoyed for dinner. 1 Liter of chicken stock can cost you anywhere from $3-$20 depending on the quality you choose. If you are already buying a Free Range or Organic Turkey you might as well make the most of the money you have spent by making your own stock. The recipe below is a guideline. In addition to the vegetables in it you can also add asparagus stems, cauliflower stems and broccoli stems. They will only enhance the quality of your stock. Onion skins give the stock a nice yellow color as well as a whole bunch of flavour so save them up for your stock. Sunday, May 15th, 2011This recipe for sweet couscous is perfect anytime of the day. I have eaten it for dinner, breakfast, and even for dessert. When I come home from school the last thing I want to do is cook so I love how quickly this dish comes together.
It is traditionally served as the final savoury course at Moroccan banquets. Since it is reserved for special occasions more expensive nuts such as pistacios and pine nuts are often used in it along with traditional almonds.
Salmon Coconut Curry

My husband was not a great fan of it but I have found that if it is marinated or there is a sauce, it is more happily accepted. This recipe combines the sweetness and creaminess of coconut milk with the tang of the lemon and the kick of the curry. I also like the fact that it’s a colorful meal and you know when you are eating colorful, you are probably eating healthy.
Dad’s Birthday Feast
Tuesday, August 17th, 2010My Dad’s birthday dinner on Sunday went great. I decided to recreate some of the recipes that I learned at the cooking class that I took while I was in Rome. Not only did they turn out but my Dad actually thought that they tasted better than they did in the class. I also made my Grandma’s famous German Apple Cake. I have not made it in about 5 years because I lost the recipe, luckily my Dad’s sister Debbie sent me a copy just in time for the party. It is my Dad’s favourite cake and everyone else that came to his party loved it! It is very similar to carrot cake, except that it is made with apples instead of carrots and it even has the same rich cream cheese frosting.
If you only try one of these recipes I would recommend the Zucchini Parmesan. It is a little time consuming to make but well worth the effort. It would even be a great vegetarian lunch or a light supper.
Since the party went so well I think I am going to have to work extra hard next year to top it!
Ultimate Meatloaf Dinner

I watched Tyler’s Ultimate on TV a while ago and he did a meal that included Dad’s Meatloaf with Tomato Relish, Green Beans with Caramelized Onions and Almonds and Velvety Mashed Potatoes. This past weekend I decided to try this menu and see if it was as good as Tyler said it was. The meatloaf turned out great and was super moist and flavourful. The green beans with the caramelized onions and almonds had great flavour and texture. I did not end up making his mashed potatoes and instead decided to create my own recipe by adding bacon bits, green onions, buttermilk, and mascarpone cheese to Yukon Gold potatoes to make my version of the “ultimate” mashed potatoes; they turned out delicious. Everyone in my family enjoyed the dinner so much that there was very little talking throughout the meal! The perfect end to this meal was the Lemon Bars that are posted below. (more…)
