Yesterday we took an Italian cooking class from Andrea Consoli at his family restaurant “Le Fate.” It was such an amazing experience that I will always remember, it also didn’t hurt that he was a super cute Italian chef! My whole family had a great time making Zucchini Parmigiana, Pasta Carbonara, Beef with Prosciutto Sage and Cheese and Strawberry Tiramisu.

Every morning Andrea goes to the market and picks up all of his produce for the day and cooks only ingredients that come from within 1 km of Rome. The fresh vegetables and fruit were delicious; the strawberries were melt in your mouth good and the zucchinis still had their blossoms attached.

I have never tried to make homemade pasta because it seemed too daunting but Andrea’s approach and helpful tips have totally changed my mind. The taste of the fresh pasta compared to dried store bought is totally different; it is softer and has a better flavour and colour because of the eggs. It was a lot of work but something that I am going to do once I get home. The beef dish that we made was from Ancient Roman times and was a super simple recipe but looked like something that would have taken hours. For dessert we had strawberry tiramisu since strawberries are in season in Rome right now. Traditional tiramisu does not have alchol in it; this is something that Americans have added to the recipe. I much preferred the taste without the alcohol. If you are ever in Rome I would highly recommend that you sign up for a cooking class with Andrea, I can promise you that you will not be disappointed. Andrea is even going to send me all of the recipes from the class and I might post them later on so keep checking back!
